4 unit Fish fillets |

Oil for brushing |

2 unit Shallots, thinly sliced |
|
1 unit Garlic clove, chopped |
|
1 tablespoon Capers |
|
6 unit Sun dried tomatoes, finely chopped |
|
4 unit Black olives, pitted and thinly sliced |
|
1 unit Grated rind and juice of lemon |
|
1 teaspoon Paprika |
|
Salt and freshly ground black pepper |
* Clean the fish if whole. cut four large squares of double thickness foil, large enough to enclose the fish, brush with a little oil.
* Place a piece of fish in the centre of each piece of foil and season well with salt and pepper.
* scatter over the shallots, garlic, sapers, tomatoes, olives and grated lemon rind. Sprinkle with the lemon juice and paprika.
* Fold the foil over to enclose the fish loosely, sealing the edges firmly so none of the juices can can escapes. Place on a moderately hot barbecue and cook for 8 to 10 minutes. Then open up the tops of the parcels and serve. |

Tips:
- These parcels can also be baked in the oven: place them on a baking sheet and cook at 200.C/ 100.F for 15 to 20 minutes. | |
